Brown Rice and Lentils

Lentils and Rice

1 cup brown rice
1 cup dried lentils
4 cups of water or broth
½ tsp salt

In a medium saucepan with a tight fitting lid, combine the rice, lentils, water and salt.
Bring everything to a full boil, then adjust the heat lower, just enough to maintain a slow, steady simmer. Continue cooking until the rice and lentils are tender and the liquid is absorbed, about 45 minutes. Turn off the heat, let stand for a few minutes and you are ready to serve.
