Greek Cucumber Pasta

2 cups dried penne pasta (or spiral
1 tbsp. olive oil (or canola)2 large cloves garlic, minced
1/2 cup chopped onion
2 cups chopped English cucumber
1 cup diced tomatoes
1 tsp. dried oregano
3/4 cup crumbled feta cheese
1/3 cup sliced black olives
salt and pepper

Cook pasta.  In large skillet, heat oil.  Saute garlic and onion until tender.  Add cucumber, tomato and oregano.  Cook about 1 minute or until heated through.  Drain pasta and toss with cucumber mixture.  Stir in cheese and olives.  Season to taste with salt and pepper.
Makes 4 servings.
