Spaghetti with Veggie Tomato Sauce


The sauce is every bit as good taste wise as the meat sauce that you are accustomed to. However, this sauce is healthy for you and will satisfy your craving for a great spaghetti and sauce meal.

Recipe Ingredients for  Spaghetti Sauce

1  tbsp veggie broth
2  diced onions finely chopped
1  cup celery finely diced
3  cloves garlic minced
1  cup mushrooms diced
1  cup colored peppers finely diced
1  cup of TVP soaked in 7/8 cup of boiling water
1  tsp dried basil
1  tsp dried thyme
1  tbsp dried oregano
1  tbsp parsley
1  can (28oz) diced tomatoes
1  can (398 ml) tomato sauce
1/2 cup sun dried tomatoes (optional)
1/2 cup red wine (optional)

Recipe Directions  Spaghetti Sauce

  1. Saute onion, celery and garlic in olive oil until soft
  2. Add a little salt
  3. Add the mushrooms and peppers and saute lightly
  4. Add basil, thyme, oregano, parsley and mix well
  5. Add prepared TVP and mix well
  6. Add whole  tomatoes crushed,  tomato sauce, red wine and mix well
  7. Bring to a boil, reduce heat and simmer for 2 hours
  8. For a lively taste add 1/2 tsp of red pepper flakes
  9. Use whole wheat spagettini pasta for the most healthy results.

Makes 8-12 servings
