Recipe Ingredients for Spaghetti Sauce
1 tbsp veggie broth
2 diced onions finely chopped
1 cup celery finely diced
3 cloves garlic minced
1 cup mushrooms diced
1 cup colored peppers finely diced
1 cup of TVP soaked in 7/8 cup of boiling water
1 tsp dried basil
1 tsp dried thyme
1 tbsp dried oregano
1 tbsp parsley
1 can (28oz) diced tomatoes
1 can (398 ml) tomato sauce
1/2 cup sun dried tomatoes (optional)
1/2 cup red wine (optional)
Recipe Directions Spaghetti Sauce
- Saute onion, celery and garlic in olive oil until soft
- Add a little salt
- Add the mushrooms and peppers and saute lightly
- Add basil, thyme, oregano, parsley and mix well
- Add prepared TVP and mix well
- Add whole tomatoes crushed, tomato sauce, red wine and mix well
- Bring to a boil, reduce heat and simmer for 2 hours
- For a lively taste add 1/2 tsp of red pepper flakes
- Use whole wheat spagettini pasta for the most healthy results.
