Potatoes -French Friesfrench fries

Potatoes 2 lbs
Seasoning Mix:
1/3 c. Dijon-style mustard
1 tsp. paprika
1 tsp. chili powder
1 tsp. ground cumin

Preheat the oven to 450 F.
Scrub potatoes, bring a saucepan of water to a boil, add potatoes and parboil for 4 minutes. Then cut into the desired shape and place them on a nonstick baking tray. Bake for 20 to 30 minutes, until lightly browned.

Option: Prior to baking add the  seasoning mix of your liking to a bowl and mix well with the fries before placing them on the sheet. Very delicious.
